Food: Cinnamon & Brown Sugar Apple Muffins | Perfect Fall Muffins

Hello! Lovelies
 
To me Fall is golden leaves, cool breezy days and warms spices. I can't wait for it to be officially fall, and we are only a few more weeks away. Here in Colorado you are starting to see early signs of fall in the trees. I can't wait until Autumn is in full bloom. It's the best time of the year. With all that being said Fall has some of the best recipes and treats in my opinion. To me nothing beats fall baking. So since Apples are coming into all the markets & grocery shops I'd make some yummy Apple Muffins. These are a great breakfast along with being sweet treat!
 
If you aren't wanting to make muffins you could use this recipe and put them in mini loafs pans. And make Apple Bread.
 
 
 
 
 
Ingredients:   Pre-Heat Oven to 375 º F | Bake For 25 Minutes | Makes 2 1/2 Dozen
 
3 1/4 Cups All Purpose Flour
5 Teaspoons Baking Powder
3 Teaspoons Cinnamon
1 Teaspoon Salt
1/2 Teaspoon Ground Cloves
4 Eggs
1 Cup Milk
1 Cup Brown Sugar + 4 Tablespoons
1/2 Cup Vegetable or Canola Oil
2 Cups Chopped Honey Crisp Apples (Or your favorite Apples)
3 Grated Honey Crisp Apples
2 Tablespoons Lemon Juice
 
 
Topping:
1 Teaspoon Cinnamon
6 Tablespoons Brown Sugar
 
In a large mixing bowl or stand mixer add all your dry ingredients: Flour, Baking Powder, Cinnamon, brown sugar, salt, & cloves. Crack your eggs in separate bowl just in case they are bloody or bad. Then add them to your dry mix along with your milk and mix. Then add your lemon juice and oil. Once you've mixed all your ingredients add grated apples and mix. After mixed fold in your chopped apples.
 
 
Line your muffin tins with cases and fill just under full. Mix your topping ingredients in a small bowl and sprinkle on top of your muffins. Bake in oven at 375º F for 25 minutes.
