Foodie Friday: Carrot Whoopie Pies

This week I made my first ever batch of homemade Whoopie pies using a few simple ingredents. And they turned out amazing. So delicious! And I did it all by using a store bought cake mix.

My family ate them up like crazy. But it's okay, they had carrots in them so they must be healthy right?


1 box Carrot Cake Mix
2 Eggs
1/2 Cup Vegetable Oil

Combine cake mix, eggs and oil in electric mixer. Scoop on to cookie sheet and bake for 8 minutes at 350°F.


6 Tablespoons Butter
1 1/2 Cups Confectioners Sugar
1 7oz. Jar Marshmallow Crème
1 Tablespoon Pure Vanilla Extract
Crème butter and marshmallow until fully combined then add in your confectioners sugar and vanilla. Mix until desired consistency. If to thin for your liking add more sugar.
Then fill into piping bag and begin piping your Whoopie Pies.
Makes: 1 Dozen Whoopie Pies
