Recipe: Vegetarian Spinach Lasagna

 Some of you maybe thinking "I'm not a Vegetarian why would I make a Vegetarian Lasagna?!" Well if the word Vegetarian frightens you don't let it. I'm not a Vegetarian. This recipe came from my Grandparents neighbor over 20+ years ago, who was.
My Dad is a meat lover. He thinks every meal he eats must include beef, but this lasagna is his favorite.

So I hope you enjoy this as much as my family does.


 
 
What you'll need:
 
Frozen Spinach
1 Egg
Ricotta Cheese
Mozzarella
Pasta Sauce
Italian Seasoning
Lasagna Noodles
 
Prep:
Start off by defrosting your frozen spinach overnight by placing it in your fridge.
 
 
 Crack 1 egg into bowl. Add 1 box (9oz) drained spinach, Ricotta Cheese (15oz), Mozzarella (1cup) & Italian seasoning (1tsp.)
 
 
Mix all these ingredients together.


Pour a small amount of sauce into the bottom of your baking dish.
 

 
Line bottom of pan with three uncooked Lasagna noodles.
 
 
Add half the cheese & spinach mixture on top of the noodles.

 
Place a small amount of sauce atop the cheese mixture.

 
Place three more noodles and repeat last step.
Once done that add three more noddles and the remainder of your sauce.


Add a cup of mozzarella cheese or however much you prefer.
 

 
Then what I do Is I fill up the sauce jar with 3/4 cup water (You don't have to use the jar you could use a measuring cup) I then pour the water around the sides of dish.
This way your pasta cooks by the steam of the water. No need to pre-cook noodles or buy the pricey no-bake noodles.
 
 
Cover with Aluminum foil.
 
Bake at 350 ºF or (176 ºC) for 1 hour 15 minutes. Once done set aside for 15 minutes covered.
 
 
Then enjoy!
